Fresh apple juice was fermented for three to four months in oak casks before being replaced with Tullamore Dew Original whiskey. This spent a further three months in the barrel before being bottled. It has given the whiskey a creamier mouthfeel with some nice sweet notes. There are maybe some extra tannins but no strong apple flavours.

A private cask of Tyrconnell bottled at 17 'and a half' years old! Bottled at cask strength and not chill filtered, it is a beautiful example of Cooley's unpeated single malt well aged in a bourbon cask. Sweet malt with some sour fruits and a lovely biscuity finish. Great balance.
